Mushroom Pate

An excellent starter!
















Ingredients (serves 8 ordinary or 4 hungry people)
250g (half pound) of mushrooms (horse mushrooms, field mushrooms, parasol mushrooms, St Georges Mushrooms, etc)
One small or half a large onion
One clove of garlic
Olive Oil
2-3 tablespoons of cream cheese
One racher of smoked bacon (optional)
Salt and lots of black pepper
 
 
(1) Chop and sautee the onion, garlic and bacon till brown in a little olive oil
 
(2) While the onion is cooking, clean and dice the mushrooms. Add them to the pan with some seasoning, and cook until just softened (but no more)
 
(3) Pour the mixture into a blender or food processor, and whizz till you have a lumpy puree
 
(4) Stir in the cream cheese, and pour into a dish to set. Leave it in the fridge till cool and you should have a soft pate. Serve with toast or crackers and seasonal salad.
