Garlic Mushroom Fritters

Ingredients
















Firm, tasty mushrooms (agaricus, young parasols and blewits are good)

1 egg and 2 cloves of garlic per 75g (3oz) of flour

A little milk or beer

Salt and pepper to taste

(1) Make the batter by beating the flour with the egg and mixing in just enough beer or milk to make it a good, thick batter.
(2) Crush the garlic and add it to the batter along with any seasoning. Leave the garlic batter mix in the fridge for half an hour or so.
(3) Brush the mushrooms to get rid of any dirt and mini-beasts, and cut them into segments. Dip them in the batter, and deep fry them until golden brown. Serve immediately.
 
This makes an excellent starter with a little sour cream and chive dip.
